Southern Indian Food vs Northern Indian Food

India is a diverse country with differences in language, culture, tradition, food and the like from one region to another. Let us look at some of the differences between Southern Indian food and Northern Indian food.

Wheat is the staple food of Northern India, and rice is the staple food in Southern India. Northern Indian food has been much influenced by the Mughlai cuisine. Northern Indians are both vegetarians and non-vegetarians and use more wheat. The Southern Indians use more vegetables, rice, and seafood. Another thing that can be seen is that coconut is added more in Southern Indian food.

The typical Northern Indian meal consists of chappatis, parantha, dal, pilafs, curries made in ghee, vegetables seasoned with pomegranate powder or yogurt, mustard greens cooked with paneer, fresh tomatoes, pickles, mint, yogurt raitas and cilantro chutneys. Cardamom milk is a common thing before going to bed for Northern Indians.

The Northern Indian sweets and desserts are made of paneer, milk, lentil and wheat flours combined with dried nuts. They are garnished with a thin layer of silver. Lassi (iced buttermilk) is a popular drink in the North. In the non-veg category, tandoori cooking is a speciality of Northern India. Naan, tandoori chicken, tandoori kebabs, and tandoori roti are some of the famous tandoori dishes.

Southern Indian dishes include more rice. Rice is mixed with lentils to make idlis, dosas, and uttapams. The Southern Indian food also consists of a variety of dishes such as; lemon rice, Biryani, tamarind rice, and the like. Sambhar, rasam, and dishes made from various vegetables are also seen in Southern Indian food. Coffee is used more in Southern India than in Northern India.

When comparing the dals and curries, the Southern Indian creations are soupier than the Northern Indian’s. It is also seen that Southern Indian dishes are spicier than the Northern Indian foods.

  1. In southern Indian cooking, the masalas are fried and cooked before the meat or vegetables are added. The sliced onions are typically fried or sautéed first, then the spices added. I have observed this from my wife cook many curries and rices. My wife is a very good cook, she learned from my father and my sister-in-law. She does look at recipes once in a while, but otherwise it is just from memory and knowing how. I think she is just a fantastic cook and so do all of my family. I am frequently disappointed by many restaurants, and I hate to pressure her to cook a meal, she is that good!
