Is there any difference between white and green asparagus? Yes, one can come across slight difference between white and green asparagus. Green asparagus is very common and mostly preferred.

One of the main differences that can be noticed between white and green asparagus is in their cultivation. White asparagus is cultivated using a process called as etiolation, which means depriving sunlight. The white asparagus does not contain chlorophyll as it is deprived sunlight. This means that it does not have any green colour. The green asparagus is uncovered, which means it gets sunlight. When the white asparagus is piled up with soil to prevent it from sunlight, the green asparagus is not piled up with soil.

When compared to green asparagus, white asparagus has a milder flavour. In aroma, the green asparagus has an intense aroma in comparison to white asparagus. Another difference that can be seen is that the green asparagus is slightly sweeter than the white asparagus. It should also be noted that white asparagus are tender when compared to green asparagus.

When cooking, the white asparagus needs to be peeled off. The green asparagus has a fleshy texture than the white asparagus.

Both the white and the green asparagus have almost the same medicinal benefits. All asparagus has significant amounts of folic acids, potassium and vitamins. Asparagus helps in preventing birth defects, colon/rectal cancer and heart diseases. Asparagus also boosts the immune system and regulates pressure. Another added feature of asparagus is that they do not contain cholesterol and fat. Though all asparagus have the almost the same nutrients, white asparagus has slightly less nutritional content than the green asparagus.
