Difference Between Chicken Stock and Chicken Broth

Chicken Stock vs Chicken Broth

As ‘chicken stock’ and ‘chicken broth’ are most of the time used interchangeably, it creates some sort of confusion. Most of the people tend to ask, ‘Is there actually any difference between chicken stock and chicken broth?’ The answer is, ‘Yes.’ Both of them are different in many respects.

Chicken stock is mainly made from the bony parts of chickens, and chicken broth is made from chicken meat.

Chicken stock is known to be good for sauce as it binds up the drippings. On the other hand, chicken broth will not bind the drippings in the same way as chicken stock. It is the gelee present in chicken stock that helps in binding the drippings.

Chicken broth has high flesh-to-bone proportion. In making broth, whole chickens or an assortment of parts of the chicken are used. It is said that stewing chicken makes a good chicken broth than the roasters and fryers.

Chicken stock comes in a less flesh-to-bone proportion. The back, breastbones, and neck parts make a better chicken stock.

In comparison, chicken stock is more concentrated than chicken broth. This is because of the presence of the marrow in the bones. Chicken stock comes in a heartier flavour than chicken broth.

In both the chicken stock and chicken broth, the ingredients are almost the same. Mirepoix (chopped onion, carrots, and celery), bay leaves, peppercorns, and parsley stems are the main ingredients that are used.

Both chicken stock and chicken broth are highly nutritious.
